A SECRET: The Foodies in their travels on the island have come to know the finest restaurants in the Hamptons. Our personal favorite is Roberts (755 Montauk Highway, Water Mill, 631.726.7171) offering Italian Coastal Cuisine. The kitchen of Chef de Cuisine Natalie Byrnes is without equal on the east end. But as the summer approaches, we’re hoping that one secret will enable us to get a weekend table in this old roadside building filled with warmth and comfort. The charming woman at the front is a gal from Huntington. She handles the phone, the reservations, the seating and more. Tell Lisa you’re from Huntington and ask her to hold us a Friday night summer table for two. Try Roberts, you won’t be disappointed.

PRIME CHEF: Gregg Lauletta, a native Long Isalnder from Floral Park, has been appointed Executive Chef at Prime – An American Kitchen & Bar (117 New York Avenue, 631. 385-1515, www.restaurantprime.com). Lauletta graduated first in his class from The New York Restaurant School at the Art Institute of New York City. Since his first steps in a professional kitchen, Lauletta has worked alongside noted chefs in top spots. His formative cooking years were spent at An American Place, Gramercy Tavern and Gotham Bar & Grill. After a stint as executive chef at Millie’s at the Americana Manhasset, Lauletta joined Fireman Hospitality Group — Shelly Fireman’s seven diverse restaurants and its flagship Trattoria dell’Arte. Now at Prime, he advocates for the importance of seasonality and of supporting local growers from New York’s North Fork and Hudson Valley. His talented and disciplined hand is integral to the restaurant’s presentation of the latest trends in cuisine and design. Prime’s dining and décor is underscored by excellent service and topped off by a spectacular view of Huntington Harbor. Bon Apetit!
