THANKSGIVING 101: We’d bet nearly everyone who ever hosted Thanksgiving dinner has a funny story to tell. The bird that never made it into the oven… the turkey roasted with the bag of giblets still inside… gravy so lumpy you could eat it with a fork. They make for funny stories, but your guests might not be laughing so hard on Thanksgiving Day. Whether you are a first timer or an old hand at putting out a Thanksgiving spread, Ruvo Restaurant (63 Broadway, Greenlawn 631-261-7700 ruvorestaurant.com) can help get you through it with Thanksgiving 101, a cooking demo to be held at the restaurant on Tuesday, Nov. 15 beginning at 7 p.m. In addition to the cooking demonstration, the $45 per person fee includes a three-course turkey dinner and glass of wine. Reservations are a must, and space is limited.

TURKEY TIME: Thanksgiving is time to talk turkey. Whether you are cooking for a crowd or just a handful, go the extra mile and get your hands on a fresh turkey. Makanajian Farms (276 Cuba Hill Rd., Huntington 631-368-9320) sells a few thousand at this time of year, or you can order one from your butcher or grocer. What’s so special about a fresh bird? Well, what’s more important than what they’ve got is what they haven’t got: a fresh turkey has no preservatives, no injected fat or butter. It’s just plain turkey. Get yourself a meat thermometer because real turkeys also don’t have a little pop-up button that tells you when it’s time to take it out of the oven.

SQUASH SOUP: We Foodies are warm-weather people, but autumn does come with a few positives, not the least of which is the appearance on restaurant menus of roasted butternut squash soup, a seasonal treat that takes the chill out of the coldest day. Some favorites can be found at: Honu Kitchen and Cocktails (363 New York Ave., Huntington 631-421-6900 www.restauranthonu.com), where a smooth butternut squash soup with Maple crème fraiche and spiced pecan is on the Long Island Restaurant Week menu; 34 New Street (34 New St., Huntington 631-427-3434 www.34newstreet.com), where this week’s specials menu included a smooth puree of roasted butternut squash with sautéed onions and vegetable broth, and finished with a splash of cream and toasted coconut ($6); and Swallow (366 New York Ave., Huntington 631-547-5388 www.swallowrestaurant.com) where the rich, smooth puree is finished with a cappuccino crème ($7). That one’s such a crowd-pleaser it never left the menu after it first appeared last fall!
