HWE FOUND DEL LIMA: Fave chef
Steve Del Lima is back in Huntington serving as consulting
chef at Vitae (54 New St., Huntington 631 385-1919 vitaeli.com).
The founding chef at Perfecto Mundo in Commack, Del Lima first
blipped onto the Foodies radars some years ago when
he ran the kitchen at Wild Fin in Huntington village. Were
anxious to see what comes out of the kitchen at Vitae, where
he joins Executive Chef Lawrence Palladino, a fellow CA grad
and founding chef at one of the hottest startups in the restaurant
capital of Long Island. The new summer menu, introduced last
Friday and a result of their collaboration, already has a
few touches that will be familiar to Del Lima fans, like the
flash-fried sweet Thai calamari. Sure hope Steve brought that
applewood smoked bacon with him.
