SINGLE’S NIGHT: Amicale Restaurant has launched single’s night on Thursdays with all ladies enjoying half-priced drinks at the bar until midnight. DJ Geoff spins hits from the ’80s, ’90s and today. KIEFER WORE FLIP-FLOPS: Kiefer Sutherland pulled up to Huntington Harbor’s Prime – An American Kitchen and Bar (117 New York Ave., Huntington, 631-385-1515, www.primerestaurant.com) on May 31 in his California-plated silver Aston Martin DB9. Wearing flip flops, the “24” drama TV star who had just wrapped up his Broadway debut in the “Championship Season” two days earlier was seen dining on surf and turf while his guest opted for a dragon roll, beet salad and whipped potatoes.
MORNING, SUNSHINE: No one calls this Foodie “Sunshine” in the morning. Perhaps what we need is the dose of healthy goodness found in Lisa Harris’s Morning Sunshine Breakfast Cookie. NEW LUNCH ITEMS: Besito (402 New York Ave., Huntington, 631-549-0100, www.besitomex.com) introduces new lunch menu selections. New offerings include: Taquitos De Res – three soft tacos with beef short rib, salsa molcajete, chopped cilantro and queso fresco; Taquitos De Camaron Al Chipotle – chipotle-marinated shrimp, tomatillo salsa, chopped cilantro; Taquitos De Pollo – adobo chicken, grilled tomato chipotle salsa, queso fresco, cilantro and onion; Taquitos De Pescado – red snapper tacos topped with pickled red onion, shredded lettuce and salsa molcajete; and Gorditas De Chorizo Y Queso – two fresh masa cakes with chorizo, queso Chihuahua, lettuce, pico de gallo, jicama and lime.

CASINO NIGHT AT FOX HOLLOW: Scotto Brothers will host a casino fundraiser for the Nassau County Firefighters Museum and Education Center on July 27 at The Fox Hollow in Woodbury. Proceeds will go to an exhibit and memorial the museum is installing in memory of Nassau County firefighters who lost their lives on 9/11. Admission is $100 and includes dinner, drinks and fun! ULTIMATE CHEESEBURGER: Our friends at Banfi Vineyards tell us the best hamburgers are about the meat itself, and not the fancy toppings. And not all ground beef is created equal. Banfi advises you’ll want some fat or the burger will be dry. You also want flavor, which means choosing meat ground from a well-exercised muscle group such as the chuck. Look for a meat-to-fat ratio of about 4 to 1 (80-percent lean). Here’s their recipe for six (courtesy of Fire it Up by Andrew Schloss and David Joachim, Chronicle Books): 2 pounds freshly ground beef chuck, 1/3 cup ice-cold water; 3/4 tsp. coarse salt; 1/2 tsp. ground black pepper; 4 to 5 ounces cheddar, Swiss, jack, or blue cheese, shredded or crumbled; 6 crusty Kaiser rolls, split. Mix together the beef, water, salt, pepper, and cheese. Gently shape into 1-inch-thick patties. Refrigerate until the grill is ready. Brush the grill grate and coat with oil. Put the burgers directly over the heat, cover, and grill for 7 minutes, flipping after about 4 minutes for medium-done. Add a minute per side for well-done. Avoid pressing down on the burgers, which squeezes out moisture and makes them dry. Grill the rolls, cut the sides down, and place directly over the heat until toasted, about 1 minute. Top with cheese at last minute. If the burgers will sit, even for a few minutes, keep the rolls and burgers separate until just before eating. And most important – at least to the Banfi folks – pair with Trivento Reserve Malbec.
