CINCO DE MAYO: Cinco de Mayo was a little known Mexican holiday until Corona beer’s marketing department made it otherwise. But now there’s reason to celebrate the liberation of Mexico from the French. Besito (402 New York Ave., Huntington, 631-549-0100) celebrates the holiday on Thursday, May 5 with some festive specials. Start off with a Watermelon Partida Margarita ($12) and flautas de pato – or crispy duck taco – ($10) for starters. Entree specials are Camarones Ajillo ($26), shrimp with toasted garlic and guajillo chilis over yellow rice; or Enchilada de Res ($24), soft corn tortillas filled with shredded short-rib, chorizo and serrano escabeche, baked in a roasted tomato epazote salsa, topped with lettuce, queso fresco and cilantro. Besito will be open for lunch at noon and dinner until 11 p.m.

MEZCAL HOLIDAY: If authenticity is your game, the best way to celebrate Cinco de Mayo is with the authentic Mexican spirit – mezcal. Tequila’s sophisticated sister, mezcal is also made from the agave plant – but smoky roasting and oak barrel fermenting bring sophistication and depth to the fiery liquor. Ilegal artisanal mezcal comes from the heart of Mexico but has local roots. Huntington expatriate John Rexer put the better part of a whole Mexican village to work making Ilegal, which he proudly serves at his Cafe No Se in Guatemala, and now has importer Frederick Wildman & Sons selling it to the rest of the world. You can pick up a bottle at Seaholm’s Wine & Liquors in Huntington.

CULINARY FACE OFF: The Foodies are excited about the return of Tom Schaudel to Huntington (he’s building 8,000 square feet of restaurant – his 18th – in the new Rubies Costume building in Melville). The chef who put Huntington on the food map when he opened Panama Hatties nearly a quarter-century ago, Schaudel will be facing off with chef Tom Fazio at Waters Crest Winery in Cutchogue to see who can create the perfect food pairing for the 2010 Waters Crest Rose. The winner will be determined by a food and wine industry judge. A celebratory dinner at A Mano will follow the challenge. $75 includes the tasting and dinner. It’s on May 7, 2-4 p.m. Reserve at 631-734-5065.
